PRESTO PESTO!: A VEGAN AND GF DELIGHT!


HOW THE HECK DOES A PERSON HAVE PESTO ON A VEGAN AND GLUTEN FREE DIET?


Sweet-Pea Pesto

TONIGHT I WHIPPED UP A LITTLE SOMETHING FOR MYSELF AND THE HUBBY: SWEET-PEA PESTO.  WE LOVED IT AND I HAVE SOME GREAT IDEAS FOR WAYS TO CHANGE IT UP!




SWEET-PEA PESTO
3 CUPS OF SWEET GREEN PEAS (COOKED)
1.5 CUPS OF NATURAL ALMONDS
1 LARGE HANDFUL OF FRESH BASIL
1 TBSP OLIVE OIL
1 TSP LEMON JUICE
1/2 TSP SALT

BLEND IN A FOOD PROCESSOR OR BLENDER UNTIL SMOOTH.  YOU MAY HAVE TO ADD A LITTLE WATER IF IT IS TOO THICK!



BON APPÉTIT!
SOME IDEAS TO JAZZ IT UP!

* ADD 1/2 CUP OF NUTRITIONAL YEAST (ALSO CALLED GOOD TASTING YEAST) FOR A LITTLE TANG! 
* SUBSTITUTE STEAMED BROCOLLI OR EDAMAME (OR BOTH!) IN PLACE OF PEAS
* TRY A MORE TRADITIONAL PINE NUT OR PERHAPS EVEN A WALNUT OR CASHEW IN PLACE OF ALMONDS

FOR DINNER TONIGHT I PUT THIS PESTO ON SOME RICE NOODLE ROTINI AND WE TRIED IT AS A DIP AS WELL!  BOTH WORKED BEAUTIFULLY AND I AM SURE THERE ARE MANY MORE GREAT WAYS TO PUT THIS HEALTHY, HEARTY, GUILT-FREE PESTO TO GOOD USE!  ENJOY XX
